Cubotto



Menu Lib(e)ro has begun and our first chapter is based on Non-alcoholic aperitifs and welcome cocktails. I've decided on an alcoholic route and the book I've used to source my beverage is the rather wonderful "I Futti Dimenticati" by Morello Pecchioli



Apart from the beautiful illustrations, this books contains interesting recipes for unusual and forgotten fruits.

The recipe I've selected is Cubotto - an Italian version of Cuba Libre - where chinotto replaces the cola.

To complement the stronger flavour of chinotto I've chosen to use this - Kraken. a black spiced rum.





Cubotto

[Makes 1]

40mls Chinotto
30mls Rum
30mls Sugar Syrup
juice of half a lemon
slice of lemon
ice

In a tall glass, add the ice cubes. Pour in the lemon juice, rum and sugar syrup - stir to combine and then top with Chinotto. Add a slice of lemon and serve.
